Thomas Salamunovich is the Founder and Chief Executive Officer of Savory Group based in Vail, CO. Over the past 20 years Salamunovich has been engaged in the development, management, financing, ownership and operations of multiple food-focused restaurants.
Savory Group includes two of the Vail Valley’s most highly acclaimed dining destinations; Larkspur, and Larkburger. Each restaurant is distinctive and enduring with a distinguished reputation for unparalleled cuisine and warm hospitality. Regardless of the establishment, Salamunovich echoes his commitment to fresh, natural and local ingredients.
Salamunovich continually strives to improve working capital management, evaluate operational performance, and develop and execute business plans, all while overseeing the activities of each individual restaurant in his portfolio. Along with Salamunovich, Savory Group is led by a talented team of industry professionals. Together they have earned numerous industry awards.
In addition to managing Savory Group owned and operated restaurants, Salamunovich is a food, restaurant and hospitality consultant. Past and present projects include Restaurant Avondale, Red Sky Ranch Golf Club, Centre V in the Arrabelle Hotel, Peppers (a quick-casual Mexican Restaurant) and the Vail Mountain School food operations.
After graduating from and instructing at the California Culinary Academy, Salamunovich continued his education in San Francisco during the West Coast’s food revolution. Working with Jeremiah Towers at Stars and Wolfgang Puck at Postrio, Salamunovich developed his penchant for New American cuisine. While living in France, he worked in the kitchens of three-star restaurants Paul Bocuse in Lyon and Lucas Carton in Paris, as well as two-star restaurant Elysée Lenôtre in Paris and world-renowned Poilâne Boulangerie. Salamunovich moved to Vail in 1993 as the Executive Chef at Sweet Basil and was soon promoted to General Manager. He was instrumental in the opening and operations of Zino Restaurant in Edwards, Colorado. Salamunovich and his spouse, Nancy Sweeney, opened their first restaurant Larkspur together in the Vail Valley in 1999 where they continue to raise their three children.
